At Providence, chef Michael Cimarusti makes a dish called the Ugly Bunch, an arrangement of uni, abalone and geoduck, low-on-the-food-chain creatures whose use illustrates the importance of sustainability. It's an incredibly delicious manifesto served on a bed of crème fraiche panna cotta.
